Classic Italian Dishes
A multitude of classic Italian delicacies and dishes, Sweet and savory, await your discovery. These traditional Italian dishes are deeply rooted in the Italian culture, and recipes are often passed down between generations and are cherished for their authentic origins.
Northern Italian Dishes
Northern Italian cuisine is characterised by a lesser use of Olive Oil, pasta and tomato sauce and a heavier reliance on butter (or lard), rice, corn (for polenta) and Cheeses for for cream sauces. Of course, there are exceptions to the rules such as the renowned olive oils of Liguria and the Lakes region, which feature greatly in the cuisine of these areas.
Pasta in the north is by no means non-existent, but it does have to share time with delicious Risotto and Polenta.
Main courses often reflect pride in the peoples unspoiled countryside , and are likely to include game or wild fowl such as rabbit, quail or grouse. Seafood and shellfish are popular on the coast with rivers and streams providing carp and trout.
Of course, the overall rule is "if it grows or lives well in the area, then it can make it onto the table"
Southern Italian Dishes
From the Pizza of Naples to the countless types of dried and fresh pasta, the food of the south is the soul of Italy and it counts for a great part of the history of Italian cuisine.
Here, you will find rich and Spicy Tomato Sauces and the almost exclusive use of olive oil in cooking. In fact, some of the best olive oil comes from these regions, but very little of it is exported. The south is home to citrus fruits, fields of durum wheat for pasta, olive groves and vineyards. It is also known for shepherding, and lamb and goat meat are more common than in much of Northern Italy. The sea is used to its fullest extent, with all manner of seafood enjoyed, from Tuna to Anchovies, from Clams to sea urchins.
Southern cheeses tend to be firm, such as Caciocavallo and Provolone, though there are a few exceptions, like Campania's fresh mozzarella and Puglia's burrata.
